This organic carrot cake with organic vanilla buttercream frosting was for a spring-themed charity tea. It was one cake I actually wanted to eat after I had finished it! I love carrot cake, and it just smelled so good in the creamy caramel-y way that organic vanilla buttercream does! Unfortunately upon delivery, I discovered that organic white chocolate is much more fragile than white melting chocolate...good thing it is tastier!
Thankfully I was able to do emergency surgery and keep the design intact :)
